<p>From numerous past experiences I know that<strong> one of the challenges in the aftermath of a power failure is figuring out what to do with the food in the fridge and freezer. </strong></p>
<h3><a href="https://eatouteatwell.com/how-long-can-your-thanksgiving-turkey-safely-stay-on-the-table-and-in-the-fridge/"><strong>The Basic Rules For Leftovers</strong></a></h3>
<p>If you cooked up a storm right before the actual storm (or whatever caused the power failure),<strong> a</strong>ccording to the <strong><em>March 2010 edition of the Nutrition Action Healthletter</em></strong> (Center for Science in the Public Interest), you should follow these general rules:</p>
<ul>
<li><strong>The mantra is:  2 Hours–2 Inches–4 Days</strong></li>
<li><strong>2 Hours from oven to refrigerator: </strong>Refrigerate or freeze your leftovers within 2 hours of cooking. Throw them away if they are out longer than that.<strong></strong></li>
<li><strong>2 Inches thick to cool it quick: </strong>Store your food at a shallow depth–about 2 inches–to speed chilling.<strong></strong></li>
<li><strong>4 Days in the refrigerator–otherwise freeze it:</strong>  use your leftovers that are stored in the fridge within 4 days. The exceptions are stuffing and gravy&#8211; which should be used within 2 days. Reheat solid leftovers to 165 degrees F and liquid leftovers to a rolling boil. Toss what you don’t finish.</li>
</ul>
<h3><strong>Food Safety</strong></h3>
<p>The following food safety information is from the <a href="http://www.bt.cdc.gov/disasters/poweroutage/needtoknow.asp">CDC</a>:</p>
<ul>
<li>If power is out for less than two hours food in the refrigerator and freezer will be safe to eat. While the power is out keep the refrigerator and freezer doors closed as much as possible.  This helps to keep food cold for a longer period of time.</li>
</ul>
<ul>
<li>The <a href="http://www.fsis.usda.gov/Fact_Sheets/keeping_food_Safe_during_an_emergency/index.asp">refrigerator</a> will keep food safely cold for about four  hours if it is unopened. A full <a href="http://www.fsis.usda.gov/Fact_Sheets/keeping_food_Safe_during_an_emergency/index.asp">freezer</a> will hold the temperature for approximately 48 hours (24 hours if it is half full) if the door remains closed.</li>
</ul>
<ul>
<li>If power is out for longer than 2 hours follow these <a href="http://www.bt.cdc.gov/disasters/poweroutage/needtoknow.asp">guidelines</a>:
<ul>
<li><a href="http://www.bt.cdc.gov/disasters/poweroutage/needtoknow.asp">Freezer</a>:  “A freezer that is half full will hold food safely for up to 24 hours. A full freezer will hold food safely for 48 hours. Do not open the freezer door if you can avoid it.”</li>
<li><a href="http://www.bt.cdc.gov/disasters/poweroutage/needtoknow.asp">Refrigerator</a>: “Pack milk, other dairy products, meat, fish, eggs, gravy, and spoilable leftovers into a cooler surrounded by ice. Inexpensive Styrofoam coolers are fine for this purpose. Use a food thermometer to check the temperature of your food right before you cook or eat it. Throw away any food that has a temperature of more than 40 degrees Fahrenheit.”</li>
</ul>
</li>
</ul>
<h3><strong>Can Thawed Or Partially Thawed Food In The Freezer Be Frozen Again?</strong></h3>
<p>According to the <a href="   http://www.fsis.usda.gov/Fact_Sheets/keeping_food_Safe_during_an_emergency/index.asp">USDA</a>:  “food may be safely refrozen if the food still contains ice crystals or is at 40 °F or below. You will have to evaluate each item separately. Be sure to discard any items in either the freezer or the refrigerator that have come into contact with raw meat juices. Partial thawing and refreezing may reduce the quality of some food, but the food will remain safe to eat. See the attached charts for specific recommendations.”</p>
<h3><strong>What If Flood Water Covered Food Stored On Shelves And In Cabinets? </strong></h3>
<p>According to the <a href="   http://www.fsis.usda.gov/Fact_Sheets/keeping_food_Safe_during_an_emergency/index.asp">USDA</a> follow these guidelines for what can be kept or should be thrown out:  “Do not eat any food that may have come into contact with flood water. Discard any food that is not in a waterproof container if there is any chance that it has come into contact with flood water. Food containers that are not waterproof include those with screw-caps, snap lids, pull tops, and crimped caps. Also, discard cardboard juice/milk/baby formula boxes and home canned foods if they have come in contact with flood water, because they cannot be effectively cleaned and sanitized.”</p>

It’s a source of comfort, love, nourishment – and at times, pain, bribery, control, and reward. Many of us remember and associate the food we ate, where we ate it, and with whom with good – and bad – events.</p>
<p>People can love food but be traumatized by it, too.  Food can be used as control in prisoner, famine, or hostage conditions.  People with eating challenges become so traumatized by food that it is seen as the enemy rather than nourishment.  Soldiers and captives associate certain foods with the enemy and often will never eat that food again.</p>
<p>Food has always played a major role in my large Greek/Russian restaurant family.  We have big get-togethers and a whole lot of food.  After many of us traveled, certain beloved food and wine from other cultures became incorporated into our family menus.</p>
<p>&nbsp;</p>
<p>Recently – and sadly &#8212; food played a front and center role for my family acting as a rubber band, band-aid, and a source of comfort and nourishment.</p>
<p>My Mother-in-law, Arla, died suddenly last week.  She was two weeks shy of her 87<sup>th</sup> birthday, seemingly in good health, active, and involved.  Eating out was her passion and a defining part of her life.  Fittingly, the last time I saw her, four days before her death, she had had lunch at Nobu with her friends and had invited her grand-daughter-in-law and her great-grandson, Jack, who is lovingly named after her husband. She followed this by dinner on the same day with my husband and me at a well-known Upper West Side restaurant.  When we arrived, she was waiting for us at the bar and during dinner, as she usually did, she critiqued the menu, food, décor – and the wine.</p>
<p>&nbsp;</p>
<p>Exactly one week later, food and drink played a major role the night before her memorial service.  Immediate family, having arrived by car, plane, and train gathered at a restaurant (which she would have approved of) to eat, drink, and reminisce.  It was a much needed opportunity for communal sharing – with animated commentary on the choice of wine – none of which my Mother-in-law would have drunk having preferred dry, cold white wine that made your mouth pucker.</p>
<p>After the memorial service there was an open house at my apartment.   Fittingly, food and drink provided a focus, nourishment, and conversation starter.  Even the caterer – who had become Arla’s friend, generously made a gift of the food in her honor.  Prompted by salami, cheese, fruit, cookies, coffee, wine, soda, and sparkling water, everyone seemed to have a story to tell that related to special food – or drinks – or restaurants – or trips &#8212;  and Arla.</p>
<p>Our family always joked that she kept cans of soda in her apartment for years and years that ended up being off-tasting and flat.  I’ll be darned if the first bottle of Coke, opened by her nephew and purchased two days before, wasn’t flat.  Was she smiling?</p>
<p>Her brother suggested we serve only American red wine knowing she wouldn’t have drunk it – didn’t this make him feel better and lighten the mood?</p>
<p>Her good friend, an actress, went straight to the coffee pot.  Even though it was close to 1PM she needed her morning coffee – she’s usually just getting up at that hour.  Wouldn’t Arla, who was always up at the crack of dawn, coffee in hand, have smiled?</p>
<p>&nbsp;</p>
<p>People ate, people drank, and people told stories.  Little kids and babies ate.  The dog scarfed up crumbs.  My oldest son shared some jellybeans with his brothers and cousins that he took from his grandmother’s ever present and always full jellybean bowl on the day she died.  “Fresh ones,” he said, “she must have just filled it up.”</p>
<p>The communal spirit – initiated by the unexpected passing of a mother, sister, mother-in-law, grandmother, great-grandmother, aunt, sister-in-law, and dear friend – was aided and supported through the comfort and familiarity of food and drink.</p>
<p>On the way to my apartment after the service I was in a cab with one of my sons and Arla’s brother.  As the cab alternately rocketed and crawled down Ninth Avenue we passed one of my favorite food stores in Manhattan – Poseidon Bakery.  Their spanakopites (spinach pies) and tiropites (cheese pies) have graced many a family event.  I commented on this is we passed the store.  “Maybe we should stop,” I said, mostly in jest.  My son smiled and her brother Steve cackled and turned with a certain look in his eye.  Arla would have loved it.</p>

<p>&nbsp;</p>
<h3><strong>How Does A Food Desert Affect Health?</strong></h3>
<p>It would seem pretty obvious that if there isn’t a readily available supply of good food for people to buy and eat then they won’t eat healthy food.</p>
<p>But here’s the problem:  many food deserts may not have a lot of affordable healthy food choices available, but they may have readily available and inexpensive fast food choices.</p>
<p>The <a href="http://www.cdc.gov/Features/FoodDeserts/">CDC </a>indicates that some researchers think a link exists between having easy access to affordable healthy foods and the consumption of those foods. But other studies show that even when healthier food options are available in food deserts, many people continue to make unhealthy choices based on their own personal preferences &#8212; or put more simply &#8212; because they want to.</p>
<p>&nbsp;</p>
<h3>Food Choices May Be Unrelated To The Availability Of Healthy Food</h3>
<p>A <a href="http://www.nlm.nih.gov/medlineplus/news/fullstory_114157.html">study </a>of 5,115 people,  just published in The Archives of Internal Medicine, looked at fast food and fruit and vegetable consumption compared to the availability of fast food restaurants and groceries.  The researchers found that in &#8220;food deserts,&#8221; where fast food is readily available and there are few or no supermarkets, the local population is drawn to the fast food. But even where there are supermarkets and groceries the food choices the locals make don’t seem to be based on healthy eating.</p>
<p>The <a href="http://www.nlm.nih.gov/medlineplus/news/fullstory_114157.html">results</a> showed that in low-income areas, particularly among men living within one to two miles of a fast food restaurant, there’s a strong association between the availability of fast food and how much of it they consumed. But, they also found that there was no strong association between living near a supermarket and eating more fruits or vegetables.</p>
<p>&nbsp;</p>
<h3><strong>Are Supermarkets Important?</strong></h3>
<p>The <a href="http://consumer.healthday.com/Article.asp?AID=654771">lead researcher</a> says that it isn’t enough to expect that building supermarkets will make people shop for healthy foods in them.  She thinks that <a href="http://consumer.healthday.com/Article.asp?AID=654771">healthy foods</a> need to be promoted and affordable and that people also need to be taught that there are better and <a href="http://consumer.healthday.com/Article.asp?AID=654771">healthier food choices</a> available in fast food restaurants, too.  If someone chooses to go to a fast food restaurant they should have the option to find and choose food items that are “relatively more healthy as opposed to less healthy.”</p>
<p>However, just because there might not be a strong association between food choices and supermarkets doesn&#8217;t mean that markets aren&#8217;t important.  It might be that the market may not be stocked with an abundance of healthy food choices or that the healthier options are expensive and crowded out by an overwhelming array of unhealthier options.</p>
<p>&nbsp;</p>
<h3><strong>What Is Important?</strong></h3>
<p>It’s not enough to just teach people what’s healthy and how to make healthy choices. The food environment is crucial and needs to support making healthy food choices easy, attractive, affordable (competitive with the “cheap” calories of fast food), and the cool choices to make.   Just like the oasis in the sandy dessert, there needs to be a welcoming oasis of healthy food choices in the “food deserts.”</p>

EAT, of course!</p>
<p>Oh, the food!  Oh the calories!  Hang on – this post is not about ignoring the good time food.  Of course, there are always healthy food options:  you can bring your own or be scrupulous in making healthy choices. But honestly, do you think that most people really want to eat low calorie foods when they’re at a ballgame or amusement park? No way.</p>
<p>So what do you do when you’re at these places with food vendors about every 20 feet hawking dogs, ice cream, and beer?</p>
<h3><strong>There Are Ways And Then There Are Ways</strong></h3>
<p>If you’ve got a will of iron, I guess you could ignore the food and drinks.  But if you’re like most people and you’re tempted at every turn, you can try to minimize the damage without taking out the fun.  If you know you’re going to be having a stadium or food court meal, do some thinking, planning, and learning.  The best choices are not always the obvious ones.</p>
<p>Do you need both peanuts and popcorn?  Can you make do with a regular hot dog instead of a foot-long?  Can you keep it to one or two beers instead of three?  Can you choose the small popcorn instead of the jumbo tub?</p>
<h3><strong>Make Your Best Choice</strong></h3>
<p>Here’s some info to help you make your best choice.  Just a heads up – we’re not talking about the most nutritious choice because given these foods, quality nutrition is not front and center.  You can, however, enjoy your day and make the best caloric choice (with a nod to fat and sugar content) and still eat traditional ballpark and amusement park food.</p>
<ul>
<li><strong>Cotton Candy</strong>: Nothing but heated and colored sugar that&#8217;s spun into threads with added air. Cotton candy on a stick or wrapped around a paper cone (about an ounce) has around 105 calories; a 2oz. bag (common size) has 210. A lot of sugar, but not a lot of calories – albeit empty ones.</li>
</ul>
<ul>
<li><strong><img loading="lazy" decoding="async" class="alignright size-full wp-image-1680" title="crackerjacks" src="https://eatouteatwell.com/wp-content/uploads/2011/06/crackerjacks.gif" alt="" width="108" height="220" />Cracker Jack (</strong>officially cracker jack, not jacks<strong>)</strong>: candy-coated popcorn with some peanuts. A 3.5oz stadium size box has 420 calories but does have 7g  protein and 3.5g fiber.</li>
</ul>
<ul>
<li><strong>Hamburger: </strong> 6oz. of beef with a bun has about 490 calories &#8212; without cheese or other toppings &#8212; which up the ante.</li>
</ul>
<ul>
<li><strong>Grilled Chicken Sandwich</strong>, 6oz.: 280 calories – not a bad choice.  6oz. of chicken tenders clock in at 446 calories.  Barbecue dipping sauce adds 30 calories a tablespoon.</li>
</ul>
<ul>
<li><strong>Hot Dog: </strong>Most sold out stadiums can sell 16,000 hot dogs a day. A regular hot dog with mustard has about 290 calories: 180 for the 2oz. dog, 110 for the bun, zilch for regular yellow mustard. Two tbs. sauerkraut adds another 5-10 calories, 2 tbs. ketchup adds 30, and 2 tbs. relish another 40. A Nathan’s hot dog racks up 320 calories; a foot-long Hebrew National 510 calories. Hot dogs are usually loaded with sodium.</li>
</ul>
<ul>
<li><strong>Pizza:</strong> Stadium pizza is larger than a usual slice, about 1/6 of a 16-inch pie (instead of 1/8) making it about 435 calories a slice.</li>
</ul>
<ul>
<li><strong>Super Nachos with Cheese: </strong> A 12oz. serving (40 chips, 4oz. cheese) has about 1,500 calories!!! Plain French fries look like a caloric bargain by comparison.</li>
</ul>
<ul>
<li><strong>French Fries: </strong>A large serving has about 500 calories. A serving of Hardee’s chili cheese fries has 700 calories and 350 of them come from fat.</li>
</ul>
<ul>
<li><strong>Potato Chips</strong>:  One single serving bag has 153 calories (94 of them from fat).</li>
</ul>
<ul>
<li><strong>Peanuts in the Shell: </strong>What would a baseball game be without<strong> </strong>a bag of peanuts? Stadiums can sell as many as 6,000 bags on game days. An 8oz. bag has 840 calories; a 12oz. bag has 1,260. Yes, they have some protein and fiber.  But wow on the calories.</li>
</ul>
<ul>
<li><strong>Soft Pretzel</strong>: One large soft pretzel has 483 calories – giant soft pretzels (7-8oz.) have about 700 calories.</li>
</ul>
<ul>
<li><strong>Draft Beer:</strong> A stadium draft beer, 20oz. cup, the usual size, has about 240 calories. A light draft saves you 60 calories.</li>
</ul>
<ul>
<li><strong>Coca Cola</strong>:  A 12oz can: 140 calories –- and close to 10 tsp. of sugar.</li>
</ul>
<ul>
<li><strong>Helmet Ice Cream:</strong> Your team’s mini-helmet filled with swirly Carvel, 550-590 calories.</li>
</ul>
<ul>
<li><strong>Souvenir Popcorn: </strong> At Yankee Stadium a jumbo size has 1,484 calories and a souvenir bucket has 2,473 calories.</li>

<p>As a nurse I began to think about how nurses use the power of touch – the “laying on of the hands” – to help their patients.  I believe that this is also true for any parent who uses a gentle touch or a hug to convey energy and healing to a child – or for other healers who appropriately and with discipline use the power of touch and energy transfer for healing purposes.</p>
<p>As a nutritional counselor I started to think about the energy we gain from both food and the act of eating.</p>
<h3>We Get Energy From Food And From Eating, Cooking, And Sharing</h3>
<p>Food supplies calories and a calorie is a quantifiable, measurable unit of energy.</p>
<p>But food – and the act of eating and sharing – supplies energy in another unquantifiable way, too. Think about the energy you can get from sitting around the kitchen table hashing out issues – over food &#8212;  or the great feeling to be had after sharing a phenomenal meal with someone special. What about that very special jolt of love and energy you get when you cook or share something as special as a homemade cookie with your child?</p>
<p>As <a href="http://en.wikipedia.org/wiki/Craig_Claiborne">Craig Claiborne</a>, restaurant critic,  food writer, and former New York Times food editor said in <em>Craig Claiborne&#8217;s Kitchen Primer</em>: <a href="   http://www.foodreference.com/html/qfoodandlove.html">“Cooking is at once child&#8217;s play and adult joy. Fast food companies speak to children early, often, and when parents aren’t looking. Fast food is aggressively marketed toward children as young as two.</p>
<p>In 2009 the <a href="http://www.fastfoodmarketing.org/">fast food industry</a> spent more than $4.2 billion on TV advertising and other media. Preschoolers saw 21% more fast food ads on TV then in 2003; children saw 34% more; and teenagers 39% more.</p>
<p>According to Yale’s Rudd Center for Food Policy &amp; Obesity, <a href="http://opac.yale.edu/news/article.aspx?id=7981">a comprehensive study</a> looked at the marketing of the twelve largest fast food chains and at the calories, fat, sugar, and sodium in over 3,000 kids’ meal combinations and 2,781 menu items.</p>
<p>&nbsp;</p>
<h3><a href="http://opac.yale.edu/news/article.aspx?id=7981"><strong>What The Study Found</strong></a><strong> </strong></h3>
<ul>
<li>13-17 year olds buy 800-1,100 calories in an <a href="http://opac.yale.edu/news/article.aspx?id=7981">average fast food meal</a> – about half of their recommended total daily calories.</li>
</ul>
<ul>
<li>At least 30% of the calories in <a href="http://opac.yale.edu/news/article.aspx?id=7981">menu items</a> purchased by children and teenagers are from sugar and saturated fat.</li>
</ul>
<ul>
<li>A single meal contains at least half of the daily recommended sodium for young people in most fast food restaurants.</li>
</ul>
<ul>
<li>Although most <a href="http://opac.yale.edu/news/article.aspx?id=7981">fast food restaurants kids’ meals</a> have at least one healthy side and beverage option, they are rarely offered as the default.</li>
</ul>
<ul>
<li>McDonald’s and Burger King show only healthy sides and beverages in child-targeted advertising but automatically serve french fries with kids’ meals at least 86% of the time and soft drinks at least 55% of the time.</li>
</ul>
<ul>
<li>Faced with pressure about portion sizes companies rename, not eliminate, their largest sides and drinks.  For example, Burger King’s 42-ounce “King” drink is now the “large” option; the previous  32-ounce “large” is now a “medium”; the  “medium” 21-ounce drink is now a “small”; and the 16-ounce “small” is now the “value” choice.</li>
</ul>
<ul>
<li><a href="http://opac.yale.edu/news/article.aspx?id=7981">Kid’s food choices</a> are affected by exposure to food and beverage ads targeted to adults. More than 60% of fast food ads seen by children are not for kids’ meals and older children (6-11) are more likely to order something from the dollar menu or a combo meal (27%) than to order a kids’ meal (21%).</li>
</ul>
<ul>
<li><a href="http://www.fastfoodmarketing.org/fast_food_facts_in_brief.aspx">Snacks and dessert choices</a> had as many as 1,500 calories &#8212; five times more than the ADA’s recommended 200 to 300 calorie snack for active teens.</li>
</ul>
<ul>
<li>During non-meal times in the evening and after school, teens ordered more fast food than any other age group.</li>
</ul>
<ul>
<li>Of 3,039 possible <a href="http://www.fastfoodmarketing.org/fast_food_facts_in_brief.aspx">kids&#8217; meal combinations</a> only twelve met preschool nutrition criteria; 15 met nutrition criteria for older kids and only 17% of regular menu items qualified as healthy choices.</li>

<p>Don’t you hate it: you’ve been so much attention to what you eat and your healthy eating habits are really getting grooved.  You’re starting to feel and look great, but, oh boy, you have to go to something big.  It could be a wedding, a dinner party, or dinner at a fabulous restaurant.</p>
<p><strong>First thought:</strong> I’m going shopping for something great to wear.</p>
<p><strong>Second thought:</strong> The food is going to be awesome.  Is this going to make me blow my careful eating and, then, forget it &#8212; it’s all down hill from there.</p>
<p><strong> </strong></p>
<h3><strong>The Dilemma</strong></h3>
<p>You want to enjoy yourself and be able to have some of the restaurant’s “specialty of the house” or a bunch of hors d’<strong> </strong>oeuvres followed by a delicious piece of cake at your friend’s wedding.</p>
<p><strong> </strong></p>
<h3><strong>What To Do?</strong></h3>
<p><strong> </strong></p>
<p><em><strong>Prep like your final exam is tomorrow.</strong></em></p>
<p>Remember cramming for finals?  Hit the books and collect some information.  Research the menu of the restaurant you will be going to or call your host or event planner to find out what will be served at your event.</p>
<p>Many restaurants have their menus online – or you can stop in for a preview.  If you nicely give your host, the caterer, or the event planner a solid reason for wanting to know the menu, you’ll be surprised at how accommodating most can be.</p>
<p>After you’ve researched what can be ordered and/or what will be served, you can then come up with your plan.   If you want that fantastic dessert perhaps you decide to keep your hand out of the breadbasket.  Do you want to have wine with dinner?  Maybe forego a cocktail (or two) – and its calories – before dinner.  Want the very special hors d’oeuvre?   Maybe dessert gets jettisoned.</p>
<p><em><strong>The point is:  You are in control and can choose what you want to do.  But planning is important.  Make up your mind what you’re going to do ahead of time and commit to it.</strong></em></p>
<p>A game time decision means that you’re making decisions when too many enticements are already in front of you.  That’s not easy to do.  So, do your research, come up with a plan, and stick to it.  Allow yourself something special – don’t take that away.  But, maybe stick to one or two special treats, not an ongoing feast.  You’ll feel fantastic, in control, and tremendously proud of yourself.  You’ll have had something delicious -– and your new clothes will still look just as great.  Most importantly, those new healthy eating habits are still intact and have and will continue to serve you well.</p>
